At home, Sapper was in charge of grating Parmesan cheese for pasta dishes. When commissioned by Alessi to design a grater, he relied upon his cheese grating experience to conceive a tall, conic shape that allows for long strokes, resulting in greater efficiency (each stroke grates just enough cheese for one portion).
